Coconut Genmai Chai Bites

These sweet bites make a perfect energizing snack, or a treat to serve alongside a cozy drink. Genmai Chai delivers subtle warmth and a significant dose of antioxidants from its matcha green tea and spices.

Servings:
Makes 9 bites

Ingredients:
3 cups (about 120g) shredded unsweetened coconut flakes
2 tsp Genmai Chai powder
1 1/2 tbsp coconut oil (use solid rather than melted)
1 tbsp maple syrup
Pinch unrefined salt

Method:
In a food processor, blend coconut flakes and Genmai Chai powder for several minutes, until the mixture breaks down and starts to stick together. Add the coconut oil, maple syrup, and a pinch of salt and process again for 1 minute to fully combine. Using a tablespoon measurement, scoop and pack mixture, shaping into small bites or balls. Refrigerate at least 30 minutes before serving. Keeps 4 to 5 days in the refrigerator.
